BARLEY & LENTIL

Ingredients:
1 cup chopped onion
1 cup chopped celery
1 clove minced garlic
1/4 cup vegetable oil
1 can (28 oz) tomatoes or 4 cups fresh diced tomatoes
3/4 cup lentils, sorted and rinsed
3/4 cups pearled barley
6 cups water
6 vegetarian bouillon cubes
1/2 tsp dried rosemary, crushed
1/2 tsp, dried oregano, crushed
1/4 tsp pepper
2 cups thinly sliced carrots
1 cup shredded Swiss cheese (optional)

Instructions:

In a large heavy soup pot, cook the onions, celery, and garlic in hot oil until tender. Add the water, tomatoes, lentils, barley, bouillon cubes, rosemary, oregano, pepper, and carrots. Cook for 40 minutes, or until the barley, lentils, and carrots are tender.
Top with Swiss cheese (optional)
