Rice Fruit Pudding

BLEND until smooth:

1 c.  pineapple juice
1/4 c.  raw cashews OR almonds
1/8 t.  salt
1-2 t.  vanilla flavoring
2 T.  fruit concentrate, opt.
1-2   ripe bananas or apples (bananas work best for a creamy texture)

COMBINE in a bowl

4 c.  well-cooked brown rice
1/4-1/2 c.  raisins
1  c.  pineapple chunks (use juice for blending; lightly blend to crushed style)

ADD blended ingredients to rice mixture and mix well. 
POUR into 7x11 casserole dish. 
GARNISH with sliced almonds and/or raisins  or peaches. 
BAKE at 350o for 20 minutes. 
SERVE warm or cold.
YIELD: 2 quarts
Note: may adjust fruit, juice, and salt to your preference.
