SPICY OKRA AND POTATOES
1/2 onion minced
1 tsp. minced garlic
3 tbsps. oil
1 - 2 cups of tomato puree
1 potato diced in 1" cubes
15 or so fresh okras
onion/garlic powders
salt and pepper to taste
Heat oil and sauté minced garlic/onions until
all is translucent. Add tomato puree, diced potatoes and washed
fresh okras (with tops on). Add onion and garlic powder and salt and
pepper to taste. If preferred add a pinch of flaked red peppers to
taste. Add a spoon of margarine or butter to finish off sauce after
15 mins of simmering.
Serve with brown or white rice as preferred,
baked sweet potatoes and cucumber/onion/tomato salsa.
