SPINACH ROLL-UPS

  • 8 or 15 Lasagna Noodles cooked al dente.
  • Basic Marinara sauce or bottled spaghetti sauce dressed with onion/garlic powder, dry basil/oregano celery seeds, salt/pepper and a dash of sugar
  • Frozen spinach thawed and drained - 2 boxes
  • Sm. container of Ricotta cheese combined with one or two beaten eggs
  • 1/2 cup of Parmesan cheese/ Sprinkle of Mozzarella

Prepare a oblong baking dish by layering generous amount of spaghetti sauce on the bottom. Layer on each lasagna noodle ricotta cheese and drained spinach until the baking dish is covered with 8 to 15 spinach roll-ups depending on the amount you wish to make. Spoon another layer of spaghetti sauce and sprinkle with parmesan and mozzarella. Add another layer of spinach roll-ups if making enough for a crowd. Bake in a 350 degree oven for 40 mins. or until sauce is hot and bubbly and it starts to smell real good. Serve with winter salad and green peas. Bon Apetito!
