PECAN MEAT BALLS

  • 1 cup of pecan meal
  • 1 cup of breadcrumbs
  • 2 Eggs beaten
  • 1 cup of grated cheese
  • 1 cup chopped parsley

Mix well together and season as desired - thyme, onion & garlic powder salt and pepper

Shape mixture into balls and deep fry pecan balls using enough oil. Fry quickly as balls tend to fall apart. Place on paper towels to soak up extra oil and to decrease calories.

Finally to dress them up combine your favorite Bar-B-Que sauce and Apricot Jam in a sauce pan, heat and pour over pecan balls. Serve on party platter or use with spaghetti sauce as a tasty alternative.
