Dear Sister,
Greetings from the Hinterland where it is
currently a temperate (for us) -6C.
Last night Carol Henry, a Church member,
and also a Nutrition professor at the U of S, called the interested
together for a meeting to discuss bringing CHIP (Coronary Health
Improvement Project
http://www.sdachip.org/ ) to our city.
We watched an impactful video that
introduced the program. CHIP "graduates" testified to the life-changing
effects the 30-day lifestyle program had had for them. Some of us had
stories about friends and family who had attended CHIP.
Carol and her "team" (Barb and Collin)
had done a great job in researching various aspects of the program. Now
we are going to the Church Board meeting with a request for training.
We would appreciate any information and/or testimonials about your
Church's CHIP experiences. Email me and I will connect you with Carol.
I will provide more information later.... if your Church wants to join
us for training, there will be a $200 training cost (for however many
persons you want to send to Saskatoon).
One of the pleasant parts of the meeting
was the "light supper potluck" that followed the business portion. We
had soup, pizza, hummus and pita chips, corn muffins, crudités and a
chickpea salad. I have included a couple of recipes below (a first,
eh?):
Barb's
Gala Garbanzo Salad
Barb Raney is a favourite, famous cook
and foods authority in our community. She and her husband, Phil, grow a
massive garden and minister with their delights at potlucks and corn
roasts throughout the year. The following salad is very refreshing and
satisfying to the palate:
Combine:
Sweet peppers (any/all colours), chopped
Celery (chopped)
Onion (chopped)
Tomato (chopped)
Garbanzos (canned, drained)
Toss with:
Combined juice of two lemons, a spurt of
olive oil, a smidge of salt
CYNTHIA'S LEFTOVERS LENTIL SOUP
So named to reflect the casual nature of
this soup-- pretty much any vegetable matter lurking in the back of your
fridge could be a candidate for inclusion.
In large heavy pot with tight fitting lid
(or Dutch oven):
Sauté 1 chopped onion and 1 complete
chopped bulb of garlic (I know, I know) in olive oil, and then add a bit
of water and let cook soft with lid on
Add 8 C of water
Add 1-2 C of dry lentils (rinsed-- I use
organic green)
Add any chopped vegetables (I used
broccoli-- forgot about the carrots I had planned to include)
Add one jar of pasta sauce (I used Muir
Glen Organic I bought at Costco)
Season as you like (salt, oregano,
cumin-- actually the pasta sauce has a lot of seasoning in it)
Cook the soup however you usually do-- I
have a waterless pot so I cook it, covered, for about 1 minute on high
and then on absolute minimum for about 20-30 minutes
Add whatever you have left from a jar of
salsa (I had about a 1/2 C. of President's Choice mild organic salsa
left. This was Ed's idea to give it a bit more zest).
Heat through and serve up with corn
muffins or wholegrain bread.
There will be a
Valentine's Supper at the Saskatoon Adventist Christian School, 2228
Herman Avenue, on Sunday night, February 15th. Besides the scrumptious
meal there will be an opportunity to purchase small lasagnas suitable

We are rolling near to our
deadline date for registration for the upcoming 10th Anniversary Women's
Retreat in Saskatchewan. Register by February 25th for this spiritually
nourishing, relaxing, fun event! (Click on

to find the registration sheet that can be printed and mailed in with payment).
The key note speaker will be
Rose Otis who was elected to serve as the Director of
the General Conference 'Women's Ministries' in 1990, the year of WM
revival in the Seventh-day Adventist Church. Rose edited the first six
editions of the annual women's devotional series. Among other
accomplishments, Rose served two years as the first female Vice
President of the North American Division of Seventh-day Adventists. She
has written two books, Soviet Sonrise and Almost Perfect
Angels. Rose lives in Maryland with her husband and nearby
children and grandchildren.
Other speakers will be
Carol Henry, Professor of Nutrition at the University
of Saskatchewan, and Gena Guiboche, who has a Master's
degree in Marriage and Family Therapy (Loma Linda U.) and is the
Community Wellness Administrator for the Opaskweyak Cree Nation. Gena
is taking a year off to help establish the University College of the
North.
And of course there
will be the wonderful meals that we have come to expect at the retreats
(especially the meals served at the Radisson Hotel : )) and music,
humour, prayer, fellowship and spiritual feasting. Hope you can make
